This selection contains a little bit of a mix: red, white, Champagne. Each wine has been hand selected by our Master Sommelier George Bergier.

 

"For this selection, I have gone with a bit of a mixture, with Champagne, white and red wines, including three properties I have visited and have personal connections with.

 

G.H. Mumm, Cordon Rouge Brut, Reims, France

 

This Champagne House is very close to me as its premisis are where I was invested into the position of the Consul of the Ordre des Coteaux the Champagne L'Angleterre du Nord, in January 2020. 

 

Chef de Cave Laurent Fresnet is a personal friend and he has visited the Chop Houses before to host a tasting event. I visited the House, for the third time, last October where we had a fascinating tasting of the whole House's range, including this BRUT, which is a very careful blend of Pinot Noir, Chardonnay and the Pinot Meunier.

 

It is very well balanced and fresh with golden yellow colour. A real quality fizz. It has tropical fruit aromas and a palate of ripe fruits with a subtle and rounded finish.   

 

Ideal as an aperitif, or with fish & chips and white meat dishes. 

 

Three Choirs Estate Reserve Coleridge Hill, Gloustershire, England   

 

A beautiful wine Estate set in the rural countryside of Gloucestershire, which I have had an opportunity to visit four times. The Chop Houses have a long standing relationship with the estate, as we are a great supporters of The Best of British. We actually serve this by the glass in our restaurant.

 

A blend of Phoenix, Madeline Angevine, Seyval Blanc and Orion, gives the wine good and well balanced crisp acidity, fruitiness and freshness. 

 

Perfect on its own, with fish dishes, and a must try with scallops. 

 

Canforrales Verdejo, 2018, D.O. La Mancha, Spain

 

An easy drinking and approachable Verdejo with aromatic, fresh and crisp flavours of tropical and citrus fruits, with ripe mango and melon notes. 

 

Try it with tapas, light dishes, grilled salmon and fish & chips  

 

Ponte di Piave Pinot Grigio, Delle Venezie, Italy

 

This Pinot Grigio is delicate and fruity with some lovely complexity and a well balanced structure.

 

It is excellent with risotto, pasta, light fish dishes and on its own.

 

Andreas Shiraz 2017, Bovlei Valley, Wellington, Western Cape, South Africa

 

Another estate with a personal Chop House connection. We know the owners of the winery very well, one of whom personally delivers wine to Sam's Chop House as and when required.

 

I have visited Andreas in 2016 and was most impressed with the 13 hectare (4.5 under vine) estate. The 2017 Shiraz is powerful, full bodied, with very expressive nose of spice, roasted nuts, caramel and dry prunes. On the palate we have sweet ripe red fruits, spice and crushed black pepper. On the finish the wine is long with medium tannins, fruity and complex. 

 

Try it with red meats, game, casseroles and cassoulets.

 

A little extra note: During the COVID-19 South Africa was almost closed down, much still is, and shipments of its wines are limited, and I feel that the wine makers deserve our support.    

 

Vieux Chateau Brun Pomerol, Bordeaux, France, 2013 

 

An absolute steal of a wine. An elegant and medium-bodied matured Merlot, silky, smooth textured and complex with well balanced and medium toasted oak, truffle, blackcurrant fruit, spice and a truly delicious finish. 

 

Claret and lamb - it's the very best match!"
